** To avoid cracking, don't overbake. A cheescake will appear soft in the centre at the end of baking time. it will become firm as it cools ** Run a knife around the rim immediately when it comes out of the oven, so the cheesecake can pull away from the sides of the pan as it cools. ** Don't 'shock' a cheesecake. Always allow to cool to room temperature before refrigerating. ** For the ultimate textrue and appearance, bake at 450F for 10 minutes, then 250F for about 25-55 minutes.
